Happy Birthday to you both. I am looking forward to seeing Pete tonight. The cake it looking good so far. I may have to invest in a square cake pan. Pet will have a bear cake. I have a 9X13, a tree, a bundt pan lots of loaf pans but no circles or squares. The bear will be festive. I got some mahi mahi, now I just have to figure out how to cook it. This is when google comes in handy. I will be looking up easy mahi mahi recipes.

Thanks for the birthday wishes. I got to have lunch with Jess and the girls and tonight, Lisa is making dinner. We’ll be missing Debra, but sounds like everyone else in Anchorage is coming! Didn’t get to call Jeannie today….hope she had a great day, too. Love, Pete 56 and still in the mix!

Mahi mahi… You could make a carpaccio-like product: Sear it on both sides, slice thinly, arrange on a plate, put some greens in the middle, dress with balsamic, olive oil, hard cheese shavings and pepper.

Hey Isaac:
Well, that is not exactly how Lisa treated the mahi-mahi, but boy, was it GOOD! Very moist and had great flavor. I have some in the freezer from Mexico that a friend caught a month ago….I might try the carpaccio treatment on it. I also have some tuna, I think yellowfin, that will be good grilled one of these days. Am home for a couple of days, then back to Ben and Jess’s for a week of painting the trim and hopefully installing the floor. There is plenty of work still to do, but we are knocking the projects off pretty quick. Should have some photos to show by the time we come to Seattle.
BTW, we are booked on the Clipper….couldn’t use the coupon, unfortunately, but did get the discount for booking early. It is non-refundable, so am hoping it all works out okay. I did register a complaint with the management about the coupon. You would think that with 30 days notice, there would still be availability. All for now. I am gonna smoke some king salmon for the reunion tomorrow! Love, Dad

No bear meat in the cake. I was hoping to have time to do a fish hanging out of the bear’s mouth. Maybe next time. Maybe I shouldn’t get square and round pans. The shape pans are pretty fun. Also if I get desparate I can always bake in pyrex mixing bowls. I haven’t tried that yet. I didn’t see the mahi mahi suggestion until after I cooked it. I was worried I overcooked it because I forgot about it. The mahi mahi was still moist and tasty but I probably could have pulled it out sooner. Next time I get another piece of mahi mahi I will try that suggestion. It sounds pretty good. I am glad Pete was able to be in town for his birthday. Maybe we will catch Debra this week.
