Clafouti recipe

Lisa asked for this, thought I’d post it here…

Clafouti is a fruit custard that’s really easy to make. It’s good hot or cold, for dessert or for breakfast. All the measurements are very approximate. Preheat your oven to around 350 to 400 F.

Ingredients:

  • 1 cup almond or other nut meal (buy it or grind your own using a rotary cheese grater)
  • 1 cup creme fraiche (or coconut milk, cream, or something like that)
  • 1/2 cup or so of honey
  • 2 eggs
  • flavoring such as 1 tsp. vanilla, cinnamon, etc.
  • 1 cup or so of fruit such as blueberries, raspberries, cherries, etc. (frozen berries are fine)

Cooking it:

Butter a baking dish. Properly, you should use ramekins, but I prefer a glass bread pan. Beat everything but the fruit together until well blended. It should be pretty sloppy, like pancake batter. Fold in the fruit, then pour the batter into your pan(s). Bake about 20 minutes or so, until a toothpick comes out clean or “it looks done” or it smells done.

    Hey Isaac:
    Whew….we made it home. Saw the Gales on our way out. Pretty good trip, save the last seventy miles. White-out and dark are rough. We had a nice ten pound feeder king (uncleaned) waiting in the greenhouse, so had fresh king for supper with baby asparagus….that hit the spot! Didn’t do too much shopping in Anch, so unloading was easy. Back to the grind….for Debra….I’m kinda looking for the next adventure/project. I have five days to shoot three deer, but it doesn’t look good. We may have to subsist on lamb, pork, and beef this year….I worked for a guy that has two planes, so maybe I can get a caribou!     Hi Isaac,
    I believe I will try that. Then I can bring it as a side dish to all the gatherings. We had a great time but the weather deteriorated on us at the end (see post previous Ben photos). We stopped at Gales and stayed clear of the sick kids, had a visit with Slim and a Sherry sighting. She was finishing 18 credits of online medical to keep current so she was glued to her bedroom. She had completed 4.5 credits since that morning so she was doing good! She came out and said goodbye and I took a picture of her doing her lessons. Talk to you soon! Love Mom

    Now that I am back home I will give it a whirl. It made an excellent desset and and even better breakfast.
